A SUNNY RECIPE TO DRY UP THOSE APRIL SHOWERS

So when the rain is persistent and you’re feeling rather blue, serve up the sunshine yourself with our Saucy Spring salad. A kaleidoscope of vibrant colours, capable of cheering up any sad sole that’s sick of rainfall.
You will need (Serves 2):
○ 1 Pack of Saucy Salmon with Chilli, Lime and Ginger Sauce
○ Olive oil
○ 1 head of lettuce, roughly sliced
○ 1 tbsp honey
○ A handful of dried cranberries
○ 1 cup fresh blueberries
○ ½ cup of pomegranate seeds
○ fresh figs
○ 2 avocado
○ Salt and pepper
What you need to do:
Brush your Saucy salmon fillets with olive oil, then season with the salt and pepper, and grill for approximately 8 minutes - or until the salmon is cooked through and flaky. Brush with 1 tablespoon of honey and grill a further minute. Then set aside.
Toss together the lettuce, quartered figs, cranberries, pomegranates, blueberries and sliced avocado.
Slice salmon into bite-sized pieces and arrange atop the salad, drizzling your Saucy Fish Chilli, Lime and Ginger on top. Serve your sauce either cold or hot, dependent on your preference.
