SEASONAL PICK: ORANGESPosted 2 February 2017 by The Saucy Fish Co.
The humble orange is the biggest name in fruit right now, and at its best from January to March – so stock up for a super snack or zesty ingredient.
Oranges get Saucy points for more than just their taste, as their nutritional benefits are off the charts. As oranges are packed with Vitamin C, they are brilliant at supporting our immune system and offering us a helping hand when we’re feeling under the weather. They can also help to clear skin and offer strong anti-inflammatory properties…now that’s a lot of goodness.
The orange just so happens to perfectly partner our vibrant Sea Bass with Salsa Verde. So, sea bask in the glory of our brand new frozen product for your main course, then enjoy our complimentary orange and basil sorbet for desert.
You will need:
○ ¾ cup sugar
○ ¾ cup water
○ The peel of one orange, finely grated
○ 2 cups of freshly squeezed orange juice
○ 1 cup lightly packed snipped fresh basil
Combine your syrup, grated peel, freshly squeezed juice and basil, in a bowl. Cover with Clingfilm and let it stand for around 60 minutes. Next, strain the mixture through a sieve into a bowl to remove the basil. Cover the strained mixture again and chill for approximately 2 hours.
Place the mixture in the freezer overnight (neighbouring your Saucy seas bass) and look forward to a zesty two course meal, that will leave your taste buds salsa dancing for days.
Fun Fact: Don’t throw the remaining orange peel away just yet, use it for our favourite Cuban cocktail: The President. Mix black vermouth, white rum, a dash of grenadine, ice chips, and serve in a glass with cherries and your orange peel.
