Did you know the word pesto comes from the Genoese word pestâ which means to pound or crush? This is the exact method of preparation which has been used to create the traditional Italian sauce in Genoa since the 16th century.
To make an authentic Italian pesto at home, you’ll need one peeled clove of garlic, drizzle of olive oil, generous handful of basil, another handful of parmesan and a final handful of pine nuts.
Prepare your pine nuts by frying over a medium heat until golden brown. Next, chop your basil, discarding the stalks, along with one clove of garlic. Then simply take all the ingredients and crush together with a pestle and mortar until you have a thick, paste-like consistency.
