While you might spend the big day with the family, it’s Friendmas that starts to bring in the festive cheer. It’s all in the spirit of Christmas – getting your pals together for one big fins-up. Friends from school, old work chums and folk that you just don’t see enough of throughout the year.
Such a saucy occasion needs some seriously entertaining food – lots of little bits for guests to grab, nibble and just go with the flow. Most importantly, these recipes are so hassle-free that you can be out of the kitchen and enjoying the party. Let the catch-up commence!
Horseradish blinis with mackerel:
○ Pack of fresh blinis
○ 1½ tablespoon of grated horseradish
○ Crème Fraiche
○ 2 peppered smoked mackerel fillets
○ Fresh chives
○ 1 lemon to squeeze
Simply spread crème fraiche over the fresh blinis, add a little horseradish, mackerel and drizzle with your lemon and fresh chives.
Smoked salmon pancake mini-roulades:
○ 250g cream cheese
○ 300g smoked salmon
○ Juice and zest of a lemon
○ A pack of ready-made pancakes
Mix the cheese, zest and juice in a bowl, then spread over the pancakes. Top with slices of smoked salmon. Roll tightly, then slice into 3c slices.
Pear, cheese and prosciutto wraps:
○ Your favourite cheese (we love Camembert for this)
○ 2 pears
○ 6 slices of prosciutto, cut in half
Simply wrap your wedges of pear and camembert in a generous layer of prosciutto. op on a baking tray, then bake on 160C for 10-15 minutes, until the ham is crisp and the pear is soft.
Baba Ganoush dip with warm pitta bread:
○ 1 aubergine
○ 1 lemon
Slice and roast your aubergine, drizzled with olive oil. Turn a couple of times, until your aubergine’s golden brown. Peel away the skin (don’t worry if you don’t get it all) and pop in a food processor. Add lemon juice, garlic, tahini & a pinch of salt.
Serve with warm pitta and sliced veggies.
